Here's what we are eating this week : ) I included one of the recipes below for those of you who like to try new ones...
Monday: Corn Chowder with biscuits
Tuesday: Pizza with Salad
Wednesday: Grilled Chicken w/ Twice baked potatoes and corn on the cob (I'm really looking forward to this one!!)
Thursday: Aztec quiche w/fruit
Friday: Pork chops with brown rice and greenbeans
Saturday: Leftovers
Sunday: church picnic: sandwiches and blue corn chips with salsa
Aztec Quiche
-1 1/4 cups grated Jack cheese ( I use reduced fat cheese)
-3/4 cups grated cheddar cheese
-1 9 in. deep dish frozen pie shell
-1 4 oz. can diced green chilies
-1 cup half and half
-3 eggs, beaten
-1/2 t. salt
1/8 t. ground cumin
Spread Jack cheese and half of the cheddar over bottom of the pie shell. Sprinkle diced chilies on top of cheese. In a bowl, stir the half and half, eggs, and seasonings. Pour into pie shell and top with remaining cheddar. Bake at 325 for 40-50 mins.
